Cranberry Salsa

I love that this recipe also uses ginger, one of my favorite spices!

INGREDIENTS:

2 whole oranges
2 c fresh cranberries
1/4 c onion; minced
1 tb cilantro; minced
1 tb ginger root; minced
1 Whole serrano chili, minced

DIRECTIONS:

Cut peel and all white membrane from oranges, and coarsely chop. Place oranges into large bowl. Chop the fresh cranberries and add to bowl. Add in all other ingredients and toss. Grate or zest 4 Tbsp of the orange peel.  Chill and serve!
