Avocado and Mango Salad

 

If you’re in need of a crowd-pleasing salad, check out this amazing Avocado and Mango Salad recipe chock-full of seasonal Spring veggies and fruits that are rich in vitamins, minerals and good fats…not to mention super delicious, too!

INGREDIENTS:

  • 3 Tbsp. Grape Seed Oil 
  • 1 Tbsp. freshly squeezed lime juice
  • 1 Tbsp. freshly squeezed orange juice
  • 1 shallot, minced
  • 1/2 Tsp. sea salt
  • 2 medium-sized avocados, cubed
  • 2 cups jicama
  • 2 mangos, cubed
  • 1/2 cup pineapple
  • small handful of fresh cilantro, chopped

DIRECTIONS:

Whisk grape seed oil, lime juice, orange juice, minced shallot and sea salt in a large bowl. Toss in the avocado, mango, jicama and pineapple and gently toss. Finish with the fresh cilantro and store in fridge to chill thoroughly before serving! Enjoy!
